Chocolate Chip & Applesauce Cake
Serves 16.

Ingredients:
3/4 cup canola oil
3 eggs
3/4 cup sugar
2 cups unsweetened applesauce
2 tbsp. cocoa
2 tsp. baking soda
2 cups flour
1 pkg. chocolate chip

Directions:
1.  Mix oil and applesauce.
2.  Add remaining ingredients. 
3.  Pour into a prepared Bundt pan or loaf pan.
4.  Bake 350 for 1 hour.

Banana Cake 
Serves 24.

Ingredients:
3 1/2 cups flour
1 1/2 cups sugar
3/4 cup chopped nuts
1 tsp. salt
1 tsp. cinnamon
2 tsp. baking soda
1 1/2 cups milk
1 cup banana
2/3 cup margarine
2 tbsp. lemon juice
3 tsp. vanilla
1 pkg (8oz) cream cheese
4 cups powdered sugar (icing sugar)
2 tbsp. margarine

Directions:
1.  Combine flour, sugar, nuts, baking soda, salt & cinnamon. 
2.  Add milk, banana, melted margarine, lemon juice & 2  tsp. vanilla.  Stir until smooth. 
3.  Pour into greased 9" x 13" baking pan. 
4.  Bake at 350 for 30 minutes; cool. 
5.  To make the frosting: combine cream cheese, icing sugar, margarine  & remaining tsp. vanilla.  Beat until smooth. Frost top & sides of cake. 
6.  Store cake in refrigerator.

Fruit Salad Cake
Serves 12.

Ingredients:
2 eggs
1 1/2 cups sugar
1 tsp. vanilla
2 cups flour
2 tsp. baking soda
1 tsp. salt
1/2 cup chopped nuts
14 oz fruit salad

Glaze:
1/4 cup margarine
3/4 cup sugar
1 small tin evaporated milk

Directions:
1.  Mix all ingredients (except ingredients for glaze) in the order indicated above.
2.  Pour in prepared 9" x 9" pan.
3.  Bake cake in 350 oven approx. 1 hour.

Pineapple Parfait
Serves 4.

Ingredients:
1 package vanilla pudding mix
2 cups low fat peach yogurt
19 oz can crushed pineapple in own juice

Mix vanilla pudding mix (powder) with yogurt.  Stir in canned fruit.  Pour into bowls and chill.

Fruity Rice Pudding
Serves 4.  

Ingredients:
1/2 cup evaporated skimmed milk
1/2 cup unsweetened applesauce
1 egg, lightly beaten
2 tablespoons firmly packed dark brown sugar
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract
Pinch salt
1 cup cooked brown rice
1/2 cup cooked white rice
1/4 cup + 2 tablespoons dried currants
1 1/2 ounces chopped dried apricots
1/4 cup light whipped topping

Directions:
1.  Preheat oven to 350o F.
2.  Spray 1-quart casserole with nonstick cooking spray.
3.  In medium bowl, combine milk, applesauce, egg, sugar, cinnamon, vanilla and salt.
4.  Add brown and white rice, currants and apricots.
5.  Pour into prepared casserole, cover and bake until firm, 1 hour 15 minutes.
6.  To serve, divide pudding evenly among 4 dessert bowls; top each with 1 tablespoon whipped topping. Serve warm.

Zucchini Orange Bread
Makes 2 loaves.  

Ingredients:
3 eggs
125 ml (½cup vegetable oil
125 ml (½cup) applesauce
375 ml (1 ½  cup) brown sugar, packed
15 ml (1 tbsp) orange zest
500 ml (2 cups) zucchini, grated
10 ml (2 tsp) vanilla
250 ml (1 cup) whole wheat flour
250 ml (1 cup) all purpose flour
60 ml (1/4 cup) wheat germ
15 ml (3 tsp) cinnamon
1 ½ ml (1/4 tsp) baking powder
10 ml (2 tsp) baking soda
5 ml (1tsp) salt

Directions:
1.  Preheat oven to 350 F.
2.  Spray 2  (7 ½’’ x 3’’) pans with cooking oil.
3.  In a large bowl, combine eggs, sugar, oil, applesauce, orange zest, zucchini and vanilla.
4.  Mix well and set aside.
5.  In a separate bowl, combine flours, wheat germ, cinnamon, baking powder, baking soda and salt.
6.  Add to liquid ingredients and mix well.
7.  Pour into 2 pans.
8.  Bake for 40 minutes or until tester inserted in center comes out clean.
9. Cool and slice.

Blueberry Nut Bread
Makes 2 loaves.  

Ingredients:
1 pint blueberries, fresh or frozen
3 cups + 3 tbsp. whole wheat flour
2 cups sugar
1 cup pecans, chopped
1 cup vegetable oil
1/2 cup water
4 eggs
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. salt

Directions:
1.  Preheat oven to 350.  Coat two 9 x 5 inch loaf pans.
2.  In a mendium bowl, combine the damp blueberries and 3 tbps flour; toss to coat evenly.
3.  In a large bowl, combine the remining ingredients; mix well.
4.  Carefully stir in the coated blueberries, then spoon the mixture into the loaf pans.
5.  Bake 55 - 60 minutes, or until a wooden toothpick inserted in the center comes out clean.
6.  Allow to cool slightly then remove to a wire rack to cool completely.

Banana Bread 
Makes 12 servings.  

Ingredients:
1 3/4 cups all-purpose flour
2 tablespoons + 2 teaspoons firmly packed light brown sugar
2 1/4 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
8 dried dates, chopped
6 dried apricot halves, chopped
1 egg
1 very ripe medium banana, mashed
1/4 cup skim milk
 
Directions:
1.  Preheat oven to 350F.
2.  Spray an 8 x 4" loaf pan with nonstick cooking spray.
3.  In medium bowl, combine flour, sugar, baking powder, salt and cinnamon. Add dates and apricots.
4.  In small bowl, beat egg; add the mashed banana and milk.
5.  Add the banana mixture to the flour mixture, and mix just until blended. Do not overblend.
6.  Pour into prepared pan and bake about 1 hour, or until a toothpick inserted near center comes out clean.
7.  Cool thoroughly on rack.

Apple Crisp 
Makes 3-4 servings.

Ingredients:
3 apples, peeled and sliced
8 ml (1/2 tbsp) lemon juice
85 ml (1/3 cup) whole wheat flour
125 ml (1/2 cup oatmeal
85 ml (1/3 cup) brown sugar
30 ml (2tbsp) molasses
1 ml cinnamon
1 ml nutmeg
pinch of salt
45 ml (3 tbsp) margarine

Directions:

1.  Preheat oven to 375 F.

2.  Spray pan with cooking oil.
3.  Place apple slices in pan.
4.  Pour lemon juice over apples and set aside.
5.  Blend flour, oatmeal, sugar, molasses, spices and salt in a small bowl.
6.  Cut margarine into mixture.  Mixture should have a gritty consistency.
7.  Spread over apples.
8.  Bake for 30 mins.

Oatmeal & Raisin Cookies 
Makes 36 cookies  

Ingredients:
125 ml (1/2 cup) margarine, softened
125 ml (½cup) applesauce
250 ml (1 cup) brown sugar, packed
2 eggs
5 ml (1 tsp) vanilla
185 ml (3/4 cup) whole wheat flour
185 ml (3/4 cup) all purpose flour
5 ml (1 tsp) cinnamon
5 ml (1 tsp) baking soda
2 ml (1/2 tsp) salt
750 ml (3 cups) quick cooking oats, uncooked
250 ml (1 cup) raisins

Directions:
1.  Preheat oven to 350 F.
2.  Spray sheets with cooking oil (PAM).
3.  In a large bowl, beat margarine, sugar and applesauce.
4.  Add eggs and vanilla; beat well.
5.  In a separate bowl, combine flours, cinnamon, baking soda and salt.
6.  Add to liquid ingredients and mix well.
7.  Stir in oats and raisins and mix well.
8.  Drop by rounded tablespoons onto cookie sheet.
9.  Bake 10 mins. or until golden brown.

Peanut Butter Cookies 
Makes 30 cookies  

Ingredients:
3/4 cup light peanut butter
1/4 cup soft margarine
3/4 cup packed brown sugar
1 egg
3/4 cup bran cereal
3/4 cup flour
1/2 tsp. baking soda

Directions:
1.  Cream peanut butter, margarine and brown sugar until smooth. 
2.  Blend in egg.
3.  Grind cereal in food processor or blender for 20-30 seconds. 
4.  Stir in flour and baking soda.
5.  Stir dry ingredients into peanut butter mixture. 
6.  Roll dough into 1 inch balls.  Place on ungreased cookie sheets and flatten slightly with fork.
7.  Bake at 375 for 9 minutes.  Cool on wire rack.

Sweet Crisps

Ingredients:
1/3 cup sugar
2 tbsp ground cinnamon
10  8inch whole wheat tortillas
water
applesauce or yogurt for dipping

Directions:
1. Preheat oven to 450F.  Lightly spray baking sheets with cooking spray.
2. Mix sugar and cinnamon in a flat dish.
3. Dip one side of each tortilla in water and then in the sugar mixture.
4. Stack tortillas on top of each other.
5. Cut the stack into 8 triangular wedges.
6. Place tortilla wedges on a baking sheet in a single layer. 
7. Bake for about 5 minutes or until golden brown.
8. Serve with applesauce or yogurt.
